There is a popular saying in China:“One can not brew Moutai outside of Maotai town”. Within the
15.03 square kilometers of the core production area of Maotai, the mountains, rivers, trees, air and soil together contributes to the most suitable environment for brewing.

Moutai is made of wheat, sorghum and river water, and is famous for its bouquet, the answer of which lies in microorganisms. So far, Moutai researchers have analyzed 1,946 brewery-related microorganisms.

Except for one year going through the production cycle, it takes at least 4 years of cellar preservation.
